Best Food in Madrid: Six Dishes, Where to Eat Them and the Oldest Restaurant in the World

The best food in Madrid is not paella, and the city will not pretend otherwise. Madrid is more than 300 kilometers from the sea and cooks like it: chickpeas simmered for hours over charcoal, tripe, roast suckling pig, fried eggs broken over potatoes, and a fried squid sandwich that has no business being this good so far from the sea. Six dishes carry the city. This is where to eat each one, what the oldest restaurant in the world actually claims, and how many MICHELIN stars Madrid holds before the count changes on November 24.

Every address and opening time below was read on the restaurant's own page on October 10, 2026, unless we say otherwise. Where two sources disagreed, we tell you instead of picking one.

The best food in Madrid: six dishes and where to eat them

Order by dish, not by restaurant. Madrid's old houses each do one thing better than everything else on their menu, and the regulars order that thing.

  • Cocido madrileño is the dish, and it is lunch. Cocido arrives in stages: the broth first, with noodles, then the chickpeas and vegetables, then the meats. La Bola has cooked it since 1870 in individual clay pots over holm oak charcoal, a short walk from the Royal Palace. Lhardy, open since 1839, serves the formal version. Do not plan anything athletic for the afternoon.
  • Huevos rotos belong to one street. Casa Lucio on Cava Baja made a plate of eggs and potatoes famous enough that people book it weeks ahead. It serves lunch from 1pm to 4pm and dinner from 8pm to 11:30pm, every day, and closes for the whole of August. If you are in Madrid in August, this dish is somebody else's job.
  • The bocadillo de calamares is a standing meal. Squid, flour, hot oil, bread. No sauce, no lettuce. The bars on the short streets off Plaza Mayor sell little else, and La Campana on Calle de Botoneras is one that guides name. Eat it at the bar or on the square. A plate of calamari with lemon in a sit-down restaurant is a different order and a worse one.
  • Callos are the test of whether you mean it. Callos a la madrileña is beef tripe stewed with chorizo and blood sausage until the sauce turns sticky. It is a winter dish and an honest one. If tripe is not for you, nobody in Madrid will be offended. Order the cocido.
  • Churros con chocolate are not dessert. They are breakfast, or what you eat at the end of a very long night. Chocolatería San Ginés has sold them in a passageway near Puerta del Sol since 1894. The chocolate is thick enough to eat with a spoon. Guides disagree on its hours: some say it never closes, at least one says 8am to midnight on weekdays and around the clock on weekends. We could not read its own page, so check before you count on 4am.

Botín: the oldest restaurant in the world, and what that claim says

One restaurant gets searched more than any dish in Madrid. Of 51 common search phrases about Madrid restaurants that we counted, five name Botín and three more ask for the oldest restaurant in Madrid or in Europe. Together that is about 5,760 searches a month.

The searches under-claim. Botín's own site says it was "founded in 1725" and "is the oldest restaurant in the world according to the Guinness World Records." The world, not Europe. Guinness gave it the title in 1987, and according to the Associated Press, the restaurant had to show that it had operated continuously, in the same place, under the same name. That last condition is the whole record. There are older buildings that serve food. There are very few that never stopped.

Two things worth knowing before you repeat it at the table. First, the title is contested: Casa Pedro, a tavern on the outskirts of Madrid, says it has been open since 1702. Its owners have found land records showing a tavern there in 1750, which is not yet 1702 and not yet before 1725. Second, Guinness's own page for the record returned an error when we tried to read it on October 10, 2026, so the wording above is Botín's and the AP's, not Guinness's.

The names are one restaurant. Botín, Casa Botín, Sobrino de Botín and Restaurante Botín all mean the house at Calle de Cuchilleros 17, just below Plaza Mayor. It is open every day from 1pm to 11:30pm without a break, which is rare in this city and useful if your stomach is still on another time zone. Order the cochinillo or the roast lamb. They come out of the same wood oven the house is known for, and they are the reason to go. The cellar dining room is the one to ask for.

Is it a tourist restaurant? Yes. It is also good at the two things it has been roasting for three centuries, and those two facts sit together more comfortably here than they do almost anywhere else.

MICHELIN star restaurants in Madrid: the count, and its expiry date

The MICHELIN Guide Spain 2026 was announced in Málaga on November 25, 2025. As the city's tourism office lists it, Madrid came out with 31 starred restaurants holding 39 stars: one with three, six with two and 24 with one. Four more one-star restaurants sit in towns elsewhere in the Madrid region, which is why you will also see the number 35.

TwoCoque, Deessa, DSTAgE, Paco Roncero, Ramón Freixa Atelier, Smoked Room
One24 restaurants, including the two added this edition, Èter and EMi

Three notes on that table.

  • DiverXO is the only three-star in the city. Dabiz Muñoz's restaurant in Chamartín is the hardest table in Madrid and has been for years. It is nothing like the rest of this guide, and that is the point of it.
  • Ramón Freixa Atelier is new at two stars. If a page lists five two-star restaurants in Madrid, it was written before November 2025.
  • Two of the 24 were missing when we looked. On October 10, 2026, MICHELIN's own listing for Madrid showed 29 starred restaurants in the city, not 31. Ricardo Sanz Wellington and Santerra, both announced with one star, were not on it. We could not confirm why, so we are not going to guess. Check either one directly before you book around it.

Now the expiry date. The 2027 guide will be announced in Huesca on November 24, 2026. Every number in this section is good until that evening and not a day longer. We will update this page the day after. If you are reading a Madrid star count anywhere else in late November, look for the date on it first.

Why a search for a Madrid restaurant can land you in Texas

Here is something no other Madrid guide will tell you, because you only see it when you count the searches. The single most-searched "Madrid restaurant" phrase in English is not about Spain. It is a man's name.

Chris Madrid's is a burger restaurant at 1900 Blanco Road in San Antonio, Texas, opened by Chris Madrid in 1977. People search for it about 6,600 times a month. That is more than twice the volume of "best restaurants in Madrid."

SearchSearches a monthWhere it actually is
Chris Madrid's restaurant6,6001900 Blanco Road, San Antonio, Texas
Olde Madrid restaurant2,300418 Sixth Street, Racine, Wisconsin
Chateau Madrid restaurant1,800Carteret, New Jersey
Real Madrid restaurant1,4602075 Forest Avenue, Staten Island, New York

Add those four businesses up and they account for nine of the 51 phrases and 26 percent of all the searches: roughly 12,200 of 46,600 a month. Olde Madrid is a tapas restaurant in Wisconsin. Real Madrid on Staten Island is a Spanish restaurant, not a football club. Only four of the 51 phrases include the word "Spain."

The practical lesson is small and it will save you a bad evening: when you search for a Madrid restaurant by name, add "Spain" or the street. Search engines are not careful about which Madrid you meant.

When Madrid eats, and the market everyone sends you to

Eat late or eat alone. The posted hours tell you the rule. Casa Lucio does not open its doors for dinner until 8pm and lunch runs to 4pm. A restaurant that will seat you at 6:30pm is telling you who its customers are. Have a proper lunch at 2pm, something small at 7pm, and dinner at 9pm or after.

Mercado de San Miguel is a food hall, not a market. The iron and glass building next to Plaza Mayor opened as a wholesale market more than a century ago. Today it is a little over 20 stands selling tapas, ham and shellfish to people standing up. Its site lists opening at 10am every day, closing at midnight from Sunday to Thursday and at 1am on Fridays, Saturdays and the nights before holidays. It is fine for a first drink on a first evening. It is crowded, it is priced for visitors, and nobody in Madrid does their shopping there. Go once, eat two things, leave.

Two names you will see searched. Sacha, at Calle de Juan Hurtado de Mendoza 11 in Chamartín, is a family bistro open since 1972, now run by Sacha Hormaechea, known for classics such as pig's ear and sole meunière. Listings disagree about whether it opens on Saturday night, so phone. Tatel, at Paseo de la Castellana 36, is the opposite kind of room: big, loud, with live music. Sources we read disagree about who owns it today, so we will not repeat the celebrity names that follow it around.

Book the old houses, walk into the bars. Botín, Casa Lucio and La Bola all take reservations and all fill. The squid sandwich, the churros and the market need nothing but patience in a line.
